Holiday Cranberry Salad

I love taking leftovers and making them new. In this salad recipe I took the leftover homemade cranberry sauce and turned it into a vinegrette. I often make meals out of salads and top them with yummy nutritious toppings. Get creative dont be afraid to add anything to them in your fridge and on your shelves. Dont worry about fattening dressing..fat full dressings help to break down and absorb the nutrients from the greens.

Ingredients

Bowl of super greens ( baby swiss chard, kale and spinich)

1 ball of Burrata cheese

Orange slices

Apple chuncks

Pecans

Pomegranate seeds

Dried cdanberries

Vinaigrette

1 C Whole cranberry sauce

2 Tbsp Orange juice from fresh

1 Tsp Italian or Mediterranean seasoning

1/2 tsp sea salt or pink himmalayan

1/2 tsp pepper

1/2 C Olive oil

1tsp brown mustard

Put in mason jar and shake

Directions for salad

Add greens to pasta bowl

Place burrata in middle

Top with vinegrette

Add toppings

Mix and enjoy.
