Pumpkin Oatmeal

Oatmeal is a great source of fiber in itself but added to a sugar pumpkin it increases it significantly. Sugar pumpkins are also full of Beta carotene which the body processes it into Vit A, protein, omega 3 fatty acids, potassium, and Vit C.

Cooking oatmeal inside the pumpkin increases the nutrition benefits of the oatmeal and makes you fuller longer.

Recipe

Equipment needed

  • cookie sheet

  • parchment paper

  • knife

  • large spoon

  • small mixing bowl

Ingredients

1 Small sugar pumpkin

1 tsp olive oil or brushing the inside of pumpkin

Oatmeal Filling

1/2 C Oatmeal (steel cut or whole grain)

1/4 tsp pumpkin spice

Salt to taste

1/2 Tbs Brown sugar

Toppings

Chopped Pecans

Pomegranate Arils

Directions

Preheat oven to 375 degrees

Cut pumpkin in half and scrape out the seeds

Put parchment paper on a cookie sheet and lay both sides of the pumpkin on top

Brush the inside of pumpkins in olive oil

Place in oven and bake until tender on the inside.

In a mixing bowl combine filling ingredients and fill the pumpkins

Take pumpkins out of the oven and fill with oatmeal mixture

Place back into the oven and bake until bubbly.

Let slightly cool and top with whatever toppings you like! Enjoy
