Chicken Bone Broth Immunity Soup
(When I was young I remember my Mom always making lipton noodle soup out of the box with saltine crackers every time I got sick. It did help but now that I know that contents of that little package I stay away from it. Now that I can make my own my go to soup when feeling run down or on the brink of illness is this chicken bone broth soup. I make it into a chicken soup but the bone broth can be saved to drink without added chicken meat and veggies. The added herbs boost the broth into the immunity-fighting nourishing soup that will help bring you back to feeling like yourself. Often on long days of working, errands, chores and getting in some exercise we can feel exhausted. Also after binhge eating sugar after the holidays. This is the best time to pull out some broth or soup and have a quick cup or bowl to restore you. Its simple and can be done in a crockpot, dutch oven, stove top or instapot. I like my dutch oven for this soup.
Ingredients
1 Whole Organic Free range chicken
Purified water enough to cover chicken in pot
4-5 large Carrots chopped
1 Bunch Large Celery Stalks chopped
1 Med Whole Onion chopped
6-7 Large Garlic cloves minced
1 Large knob Ginger
2 Bay leaves
4 Sprigs of Oregano or 2tsp dry Oregano
1 Small knob of Turmeric
Olive oil to coat the chicken
Salt and pepper for the chicken
If making into a soup you will need more water or a box of organic chicken or vegetable stock about 2 cups worth in addition to the broth already made about 2 cups.
Directions
Wash chicken and pat dry.
Massage chicken with olive oil, salt, and pepper.
Bake chicken for 45 min at 375 degrees.
Remove chicken from oven and cover with water and put on stove to simmer for an hour.
When liquid is reduced by half strain all chicken bones and chicken out of the broth. Add more water or a box of organic chicken broth to make soup.
Add all veggies and spices to water and on medium heat with cooked chicken shredded until veggies are soft about 20-30 min.
Remove bay leaves and enjoy in a mug or a bowl with your favorite crusty break or crackers.
For vegetable soup add any kind of veggies and remove the chicken, cabbage, mushrooms, zucchini, dark leafy greens, etc.
You can make this soup into many other recipes like Chicken tortilla soup or Greek lemon soup.
